Strawberry Cream Cheese Roll Ups (Print version)

# What goes in:

→ Filling

01 - 4 oz cream cheese, softened
02 - 2 tbsp granulated sugar
03 - 1/2 tsp vanilla extract
04 - 3.5 oz fresh strawberries, finely diced

→ Roll Ups

05 - 6 slices white sandwich bread, crusts removed
06 - 2 tbsp unsalted butter, melted

→ Coating

07 - 3 tbsp granulated sugar
08 - 1/2 tsp ground cinnamon

# Cooking steps:

01 - In a medium bowl, combine cream cheese, 2 tbsp sugar, and vanilla extract. Mix until smooth. Gently fold in the diced strawberries.
02 - Use a rolling pin to flatten each bread slice until thin and pliable.
03 - Spread about 1 tbsp of the cream cheese-strawberry mixture over each bread slice, leaving a small border. Roll up each slice tightly.
04 - Brush all sides of the roll ups lightly with melted butter.
05 - In a shallow bowl, mix together the sugar and cinnamon.
06 - Roll each buttered roll up in the cinnamon-sugar mixture until well coated.
07 - Heat a nonstick skillet over medium heat. Place roll ups seam-side down and cook, turning occasionally, until golden brown and crisp on all sides (about 6-8 minutes).
08 - Serve warm, dusted with extra cinnamon sugar if desired.
