Rich, no-bake balls with chocolate, peanut butter, and peanuts.

# What goes in:

→ Base

01 - 1 cup rolled oats
02 - 1 cup pitted Medjool dates
03 - 1/3 cup creamy peanut butter
04 - 2 tbsp unsweetened cocoa powder

05 - 1/4 cup roasted peanuts, roughly chopped
06 - 1/3 cup mini dark chocolate chips
07 - 1 tbsp honey or maple syrup
08 - Pinch of sea salt

# Cooking steps:

01 - In a food processor, combine dates and oats. Pulse until a coarse, sticky mixture forms.
02 - Add peanut butter, cocoa powder, honey (or maple syrup), and salt. Process until the dough begins to come together.
03 - Transfer the mixture into a bowl. Fold in chopped peanuts and chocolate chips.
04 - Scoop out tablespoon-sized portions and roll into balls with your hands.
05 - Place energy balls on a tray lined with parchment. Chill for at least 20 minutes to firm up.
06 - Store in an airtight container in the fridge for up to 1 week.
