Pineapple Coconut Lime Popsicles (Print version)

Sweet, creamy, and zesty frozen treats perfect for summer.

# What goes in:

→ Fruit & Juice

01 - 2 cups fresh pineapple chunks (about 1/2 medium pineapple)
02 - 1/4 cup fresh lime juice (about 2 limes)

→ Coconut Mixture

03 - 1 cup full-fat coconut milk (well shaken)
04 - 1/4 cup coconut cream
05 - 3 tbsp maple syrup or honey (to taste)
06 - 1 tsp grated lime zest

# Cooking steps:

01 - Combine pineapple chunks and lime juice in a blender. Blend until completely smooth, then set aside.
02 - In a separate bowl, whisk together coconut milk, coconut cream, maple syrup or honey, and lime zest until well combined.
03 - Alternate spooning or pouring layers of pineapple puree and coconut mixture into popsicle molds. Use a skewer or thin knife to gently swirl the layers for a marbled effect, if desired.
04 - Insert popsicle sticks and freeze for at least 4 hours, or until fully solid.
05 - Briefly run the outside of the popsicle molds under warm water, then carefully remove popsicles.
06 - Serve immediately and enjoy!

# Tips from flavorandfeast:

01 -
  • It tastes like a vacation without ever leaving your backyard.
  • The creamy coconut balances the tart pineapple perfectly.
02 -
  • Do not skip the warm water trick or you might break a stick trying to pull it out.
  • Full fat coconut milk is necessary because low fat versions turn icy rather than creamy.
03 -
  • Warm the mold slightly under hot water before filling if your layers are not sticking to the sides.
  • Taste the pineapple mix before freezing to ensure the sweetness is perfect.
