Soft chewy sugar cookies with fruity Jello powder for vibrant colors and delicious flavor

# What goes in:

→ Dry Ingredients

01 - 2 3/4 cups all-purpose flour
02 - 1 teaspoon baking soda
03 - 1/2 teaspoon baking powder
04 - 1/2 teaspoon salt

→ Wet Ingredients

05 - 1 cup unsalted butter, softened
06 - 1 1/4 cups granulated sugar
07 - 1 large egg
08 - 1 teaspoon vanilla extract

→ For Flavor & Color

09 - 2 packages (3 oz each) Jello gelatin powder (any flavors/colors of your choice; e.g., strawberry, lime)
10 - Extra granulated sugar, for rolling

# Cooking steps:

01 - Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
02 - In a medium bowl, whisk together the flour, baking soda, baking powder, and salt. Set aside.
03 - In a large bowl, cream the softened butter and granulated sugar together until light and fluffy, about 2 minutes.
04 - Add the egg and vanilla extract, beating until well combined.
05 - Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
06 - Divide the dough evenly into two bowls. Add one flavor of Jello powder to each bowl (about 3 tablespoons per bowl) and knead until the color and flavor are well incorporated.
07 - Scoop a tablespoon of dough, roll into a ball, then gently roll in extra granulated sugar. Repeat for all dough.
08 - Place cookies 2 inches apart on the prepared baking sheets.
09 - Bake for 8–10 minutes, or until the edges are set but the centers look slightly underbaked for extra chewiness.
10 - Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

# Tips from flavorandfeast:

01 -
  • The Jello powder creates an incredibly soft texture that stays tender for days
  • You can customize the colors and flavors for any holiday or mood
  • The dough comes together in minutes but tastes like you spent all afternoon on them
02 -
  • Underbaking slightly is the secret to that chewy texture we are after
  • The Jello powder will continue to bloom and intensify in flavor as the cookies sit
  • Room temperature ingredients mix more evenly and prevent dense cookies
03 -
  • Chill the dough for 15 minutes if it feels too sticky to handle
  • Rolling the dough balls between your palms warms them slightly for better sugar coating
  • Experiment with combining flavors like orange vanilla or berry lemonade
