Honey Lemon Pink Soda (Print version)

Floral honey and bright lemon meet berry-kissed sparkling soda in this refreshing pink beverage.

# What goes in:

→ Syrup

01 - 1/3 cup honey
02 - 1/4 cup freshly squeezed lemon juice (about 2 lemons)
03 - 1/4 cup water

→ Pink Color & Flavor

04 - 1/4 cup fresh raspberries or strawberries
05 - 1 tablespoon sugar (optional, enhances fruit extraction)

→ Soda

06 - 3 cups chilled sparkling water or club soda
07 - Ice cubes, as needed

→ Garnish

08 - Lemon slices
09 - Fresh mint leaves

# Cooking steps:

01 - In a small saucepan, combine honey, lemon juice, water, raspberries (or strawberries), and sugar (if using). Gently mash the berries and heat over low heat for 2–3 minutes, stirring until the honey dissolves and the mixture turns a vibrant pink.
02 - Pour the syrup through a fine-mesh sieve into a bowl or jug, pressing firmly on the fruit to extract maximum color and flavor. Discard the solids.
03 - Fill four glasses with ice cubes. Divide the pink honey-lemon syrup equally among the glasses.
04 - Top each glass with chilled sparkling water or club soda. Stir gently to combine without losing the carbonation.
05 - Garnish each glass with a lemon slice and fresh mint leaves. Serve immediately while chilled and effervescent.

# Tips from flavorandfeast:

01 -
  • It comes together in ten minutes with no special equipment beyond a sieve and a saucepan.
  • The pink color comes straight from real berries, not a drop of artificial anything.
  • It makes every single guest feel like you went out of your way, even though you barely did.
02 -
  • Do not let the syrup boil or the honey will lose its delicate floral note and taste slightly bitter.
  • Let the syrup cool slightly before adding sparkling water or you will kill the fizz instantly.
03 -
  • If you want a deeper pink without extra sweetness, let the berries steep in the warm syrup off the heat for five minutes before straining.
  • A single splash of gin or vodka turns this into the easiest cocktail you will ever make for last minute guests.
