Juicy Honey Garlic Chicken Skewers (Print version)

Sweet honey-garlic glaze coats grilled chicken skewers for a juicy, smoky-sweet main, finished with lemon.

# What goes in:

→ Chicken & Marinade

01 - 1½ lbs boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
02 - ¼ cup honey
03 - ¼ cup soy sauce (use gluten-free if required)
04 - 2 tablespoons BBQ sauce
05 - 2 tablespoons olive oil
06 - 3 cloves garlic, minced
07 - 1 tablespoon lemon juice
08 - 1 teaspoon smoked paprika
09 - ½ teaspoon black pepper
10 - ½ teaspoon salt

→ For Grilling

11 - 1 tablespoon vegetable oil (for grill)
12 - Fresh parsley or chives, chopped (for garnish, optional)
13 - Lemon wedges (to serve, optional)

# Cooking steps:

01 - In a large mixing bowl, whisk together the honey, soy sauce, BBQ sauce, olive oil, minced garlic, lemon juice, smoked paprika, black pepper, and salt until well combined.
02 - Add the chicken pieces to the marinade and toss thoroughly to coat evenly. Cover the bowl and refrigerate for at least 1 hour, or up to overnight for deeper flavor penetration.
03 - If using wooden skewers, submerge them in water for at least 30 minutes prior to grilling to prevent burning.
04 - Preheat a grill or grill pan to medium-high heat. Brush the grates with vegetable oil to prevent sticking.
05 - Remove the chicken from the marinade and thread the pieces evenly onto the skewers, discarding any excess liquid.
06 - Place the skewers on the hot grill. Cook for 12 to 15 minutes, turning every 2 to 3 minutes, until the chicken is cooked through with slight charring on the edges. The internal temperature should reach 165°F.
07 - Transfer the skewers to a serving platter. Garnish with fresh parsley or chives and serve alongside lemon wedges.

# Tips from flavorandfeast:

01 -
  • The honey garlic glaze gets sticky and charred in a way that makes every bite taste like summer.
  • You probably have most of the marinade ingredients in your pantry right now.
02 -
  • If you want to baste with leftover marinade you must boil it for one to two minutes first to make it safe.
  • Do not skip the oil on the grill grates because the honey in the marinade will cause sticking otherwise.
03 -
  • Overnight marination transforms this from good to unforgettable with almost no extra effort.
  • Cut all chicken pieces the same size so everything finishes cooking at the same time.
