# Cooking steps:

01 - Line a mini muffin tin or small silicone molds with paper liners, or lightly coat with nonstick spray.
02 - In a medium bowl, combine the Greek yogurt, peanut butter, honey or maple syrup, and vanilla extract. Stir until the mixture is smooth and completely uniform.
03 - Spoon the mixture evenly into the prepared molds, filling each cavity about three-quarters full.
04 - Sprinkle your choice of mini chocolate chips, chopped peanuts, or coconut flakes over each bite, gently pressing the toppings into the surface so they adhere.
05 - Place the tin or molds in the freezer and freeze for at least 2 hours, or until the bites are completely firm.
06 - Remove the frozen bites from the molds and transfer to an airtight container. Store in the freezer and enjoy directly from frozen.

# Tips from flavorandfeast:

01 -
  • They taste like peanut butter cup candy but packed with enough protein to justify eating three at midnight.
  • No baking, no cooking, and barely any dishes, which means more time sprawled on the couch while they firm up.
  • The toppings are entirely up to you, so every batch can be a completely different snack depending on your mood.
02 -
  • Let them sit at room temperature for two or three minutes before eating because the texture transforms from rock hard to perfectly creamy.
  • Natural peanut butter that is well stirred works best, separated oil will make your bites greasy and uneven.
  • Silicone molds pop these out effortlessly but paper liners in a metal tin work just fine with a little patience.
03 -
  • Use a small cookie scoop to fill the molds evenly and save yourself the mess of scraping batter off your fingers.
  • A tiny pinch of flaky sea salt on top of each bite before freezing elevates the flavor more than you would expect from such a simple move.
