01 - In a large bowl, whisk together olive oil, minced garlic, parmesan, lemon juice, parsley, Italian herbs, smoked paprika, salt, and pepper until well combined.
02 - Add the chicken cubes to the marinade and toss until evenly coated. Cover and refrigerate for at least 20 minutes, or up to 2 hours for deeper flavor.
03 - Preheat grill to medium-high heat. If using wooden skewers, soak them in water for 20–30 minutes to prevent burning.
04 - Thread the marinated chicken pieces onto skewers, leaving a small gap between each piece for even cooking.
05 - Grill skewers for 12–15 minutes, turning occasionally, until the chicken is cooked through and lightly charred at the edges.
06 - Transfer skewers to a platter, sprinkle with additional parmesan and parsley if desired. Serve with lemon wedges alongside.
