11 - Pinch of crushed red pepper flakes

→ Optional Toppings

13 - 6-8 slices turkey pepperoni or vegetarian pepperoni
14 - Fresh basil leaves, for garnish

# Cooking steps:

01 - Preheat oven to 400°F. Position the oven rack in the center.
02 - Divide the cottage cheese evenly between two small oven-safe bowls, spreading it into an even layer at the bottom of each.
03 - Spoon the pizza sauce or marinara evenly over the cottage cheese layer in each bowl, spreading to cover.
04 - Scatter the halved cherry tomatoes, sliced red onion, diced bell pepper, and sliced black olives over the sauce layer in each bowl.
05 - Sprinkle the shredded mozzarella and grated Parmesan evenly over the vegetables in each bowl.
06 - Arrange turkey or vegetarian pepperoni slices on top of each bowl, if using.
07 - Season each bowl with dried oregano, dried basil, crushed red pepper flakes, salt, and pepper to taste.
08 - Place both bowls on a baking sheet and transfer to the preheated oven. Bake for 12-15 minutes until the cheese is bubbly and lightly golden on top.
09 - Carefully remove the baking sheet from the oven. Garnish with fresh basil leaves if desired and serve immediately while hot.

# Tips from flavorandfeast:

01 -
  • The cottage cheese melts into the sauce in a way that creates this ridiculously creamy base you would not expect from something so simple.
  • It hits every pizza craving without leaving you in a carb coma, which makes it perfect for weeknights when you want comfort food but still want to feel good afterward.
02 -
  • Do not skip greasing or at least rinsing your ramekins before adding the cottage cheese, because baked on cheese clings like nothing else and you will be scrubbing for days.
  • Letting the bowls rest for two minutes after baking is not optional, the layers settle and the flavors come together in a way they just do not when you eat it piping hot.
03 -
  • Toast a handful of breadcrumbs in a dry pan and scatter them on top right before serving for an addictive crunch that makes the whole thing feel more like actual pizza.
  • Warm the pizza sauce slightly before spooning it on, it spreads more evenly and helps the whole bowl cook uniformly.
