Chili Lime Tahini Sauce (Print version)

Creamy tahini blended with zesty lime and chili heat, ideal for drizzling over bowls, salads, and grilled dishes.

# What goes in:

→ Base

01 - 1/2 cup tahini (sesame seed paste)
02 - 1/4 cup fresh lime juice (about 2 limes)
03 - 1 clove garlic, minced

→ Seasonings

04 - 1-2 tablespoons maple syrup or agave syrup (to taste)
05 - 1-2 teaspoons chili flakes or 1 small fresh chili, finely chopped
06 - 1/2 teaspoon ground cumin
07 - 1/2 teaspoon sea salt (or to taste)

→ Liquids

08 - 1/4 cup cold water (more as needed for thinning)

# Cooking steps:

01 - In a mixing bowl, whisk together the tahini and lime juice until smooth; the mixture may thicken initially before smoothing out.
02 - Add the minced garlic, maple syrup or agave, chili flakes or fresh chili, ground cumin, and sea salt, whisking thoroughly to combine all flavors.
03 - Gradually whisk in the cold water until the sauce becomes creamy and pourable. Add additional water in small increments if a thinner consistency is preferred.
04 - Taste the sauce and adjust salt, sweetness, or heat level as desired. Serve immediately or transfer to an airtight container and refrigerate for up to 5 days.

# Tips from flavorandfeast:

01 -
  • It takes longer to find a clean bowl than to actually make this sauce, which means dinner is rescued in under ten minutes.
  • The creamy texture and tangy heat work on literally everything from roasted sweet potatoes to Tuesday night grain bowls.
02 -
  • Tahini seizes when it meets acid and water initially, which looks alarming but is completely normal, so do not panic and throw it away.
  • Cold water works better than room temperature for smoothing out the sauce, a detail I learned after many confused whisking sessions.
03 -
  • If your tahini is dry and clumpy straight from the jar, stir in a teaspoon of olive oil before starting to bring it back to a spreadable consistency.
  • Adding a strip of lime zest along with the juice gives the sauce an aromatic lift that juice alone cannot achieve.
