Cheesy Rotel Dip (Print version)

Creamy melted cheese blended with zesty Rotel tomatoes and green chilies for an irresistible party dip.

# What goes in:

→ Dairy & Cheese

01 - 16 oz processed cheese (such as Velveeta), cubed

→ Canned Goods

02 - 1 can (10 oz) Rotel diced tomatoes with green chilies, undrained

→ Meats (Optional)

03 - 8 oz ground beef or breakfast sausage

→ Seasonings (Optional)

04 - 1/2 tsp garlic powder
05 - 1/2 tsp onion powder

# Cooking steps:

01 - If using meat, heat a skillet over medium heat and cook the ground beef or sausage until fully browned throughout. Drain off any excess fat and set aside.
02 - Place the cubed processed cheese and the entire can of Rotel diced tomatoes with green chilies (including the liquid) into a large saucepan or slow cooker.
03 - Stir in the cooked meat if using, along with the garlic powder and onion powder. Mix to combine evenly.
04 - Heat over medium-low, stirring frequently, until the cheese is completely melted and the dip reaches a smooth, creamy consistency, approximately 8 to 10 minutes.
05 - Transfer to a serving bowl and serve hot alongside tortilla chips, crackers, or fresh vegetable sticks.

# Tips from flavorandfeast:

01 -
  • It goes from pantry to party ready in about fifteen minutes flat, which means you can decide to make it at the very last second and still look like a genius.
  • The combination of melted cheese and those tangy, slightly spicy Rotel tomatoes creates a flavor that people genuinely cannot stop eating, no matter how much they promise they will.
02 -
  • Walking away from the pan while the cheese melts is a sure way to end up with a scorched layer stuck to the bottom, so stay close and stir often even when it looks like nothing is happening yet.
  • The dip will thicken considerably as it cools, so if you are making it ahead, simply reheat gently with a splash of milk to bring back that perfect consistency.
03 -
  • Cut the cheese into small, uniform cubes so everything melts at roughly the same rate and you are not stuck waiting for that one stubborn chunk to finally disappear.
  • Start with the lid on your saucepan for the first two minutes to trap heat and speed up the melting process, then remove it and stir vigorously until smooth.
