07 - 1 packet (1 ounce) taco seasoning

10 - 1 cup shredded Monterey Jack cheese
11 - 1/2 cup sour cream, for topping (optional)

→ Toppings

13 - 1/2 cup sliced black olives, optional
14 - 2 green onions, thinly sliced
15 - 1/4 cup fresh cilantro, chopped
16 - Fresh jalapeños, sliced, optional

# Cooking steps:

01 - Preheat the oven to 375°F.
02 - In a large skillet over medium-high heat, brown the ground beef and chopped onion. Cook, stirring and breaking up the beef, until fully browned and onion is tender, about 5 to 7 minutes. Drain any excess fat.
03 - Add minced garlic to the skillet and cook for 1 minute. Stir in taco seasoning, rinsed black beans, undrained diced tomatoes with green chilies, and frozen corn if using. Simmer for 3 to 4 minutes, stirring occasionally, until heated through and flavors are combined. Season with salt and pepper.
04 - Arrange half of the crushed tortilla chips in the bottom of a 9x13-inch baking dish. Spoon half the beef mixture over the chips and sprinkle with half of both cheeses. Repeat layers with remaining chips, meat, and cheese.
05 - Bake uncovered for 20 minutes, until the cheese is melted, bubbly, and golden brown.
06 - Remove casserole from oven and allow to rest for 5 minutes. Top with sour cream, black olives, green onions, cilantro, and sliced jalapeños as desired. Serve immediately.

# Tips from flavorandfeast:

01 -
  • Layers of gooey cheese and crispy chips give every bite that irresistible mix of textures you crave from nachos.
  • It’s endlessly customizable for picky eaters or surprise guests—just mix and match the toppings and proteins.
02 -
  • If you use too many chips, the dish gets dry and loses its nacho-like magic.
  • Layering the cheese between and on top makes for those perfect strings when you scoop it out.
03 -
  • Letting it rest for five minutes makes for cleaner, neater slices that don’t fall apart on the plate.
  • Mixing cheddar and Monterey Jack gives you both sharp flavor and perfect melt.
