06 - 3/4 cup granulated sugar
07 - 2 large eggs
08 - 1 teaspoon vanilla extract
09 - 3 ripe bananas, mashed (about 1 1/4 cups)
10 - 1/4 cup milk

→ Optional Add-ins

11 - 1/2 cup chopped walnuts or pecans
12 - 1/2 cup chocolate chips

# Cooking steps:

01 - Preheat oven to 350°F. Grease a 9x5-inch loaf pan or line with parchment paper.
02 - In a medium bowl, whisk together flour, baking soda, ground cinnamon, and salt until fully incorporated.
03 - In a large bowl, beat softened butter and granulated sugar with an electric mixer or whisk until pale and fluffy.
04 - Add eggs one at a time, mixing well after each addition. Blend in vanilla extract and mashed bananas until combined.
05 - Add dry ingredients to the wet mixture in thirds, alternating with milk, starting and ending with the dry ingredients. Stir gently just until no streaks of flour remain.
06 - Fold in chopped nuts or chocolate chips, if desired.
07 - Transfer batter to prepared loaf pan and smooth the surface.
08 - Bake for 50 to 60 minutes, or until a toothpick inserted into the center emerges clean.
09 - Let bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely. Slice and serve.

# Tips from flavorandfeast:

01 -
  • This loaf packs an unbelievable tenderness, and the kitchen smells like a bakery by the time it cools.
  • Not too sweet, with the perfect balance of spice and banana, it’s a sure way to make friends or win over picky kids.
02 -
  • Once, I impatiently sliced the bread too soon and it crumbled everywhere—let it cool fully for tidy slices.
  • Realizing super ripe bananas make the loaf sweeter than expected, I now taste my bananas before adding all the sugar.
03 -
  • Don’t overmix the batter or your bread will be tough instead of tender.
  • A bit of coarse sugar on top creates an irresistibly crunchy crust every time.
